About Cantine Cantine was founded by Maud Faussurier. Born into a family of restauranteurs Maud’s family life unfolded around the kitchen table in her parents apartment in Paris. Following a traineeship at the Institut Paul Bocuse in Lyon, Maud honed her skills working under Mark Hix at Hix Oyster and Chop House, Pierre Gagnaire and Roel Lintermans at Sketch and finally as Head Chef under Yotam Ottolenghi & Sami Tamimi at Ottolenghi.
The Cantine test kitchen is part library, part workshop, and part laboratory: hours are spent reading, chopping, pounding and tasting. Texture, colour, composition, and taste are much-debated issues around the kitchen worktop.
The kitchen was designed over a two year period. A major concern was to reduce the carbon and waste footprint. Natural gas has been proven to significantly contribute to climate change. Burning natural gas is now a bigger pollutant then burning coal. The test kitchen is fully electric and uses 100% renewable energy. All of the appliances have a high energy rating – they are among the most efficient in their class. Cantine avoids unnecessary food waste by efficient portioning and planning and they work closely with their waste management partner to learn how to further improve
waste and carbon output.
